just finished watching the original Gundam movie trilogy. Should i move on to Zeta or should i watch some of the OVAs as to not burn myself out? also what's your favorite Gundam series?

The last third if the tv show, from roughly ep. 29 to the end is when the show got good. The first two compilation movies worked well because there was a ton of filler until they got to Jaburo. After Jaburo the tv show's pacing picked up, with hype happening all the way to the end. The third mobie overcompresses this tight pacing hurting the sense of urgency and desperation and mindbreak of the war grinding down on everyone.

The first series (0079) is the best, only Zeta, War in the Pocket and Turn A come close.

It's not just the last third. While I agree with what you said Encounters in space still conveys aptly the story of the series. In contrast Soldiers of sorrow is complete mess that combines several subplots that don't really mesh together very well and thus more or less botches them all, despite it containing some very important character building moments.
Ramba Ral's subplot feels pretty much like an afterthought. The point of the whole conflict between Amuro and Bright is lost. I sometimes like to imagine that this is where the whole "Bright is a child-slapping badass" meme comes from.

In a meta way, the weird pacing of the first half of the show reinforced the theme of civilians getting drafted into a war with stretches of bored filler time punctuated by sheer terror of fighting for survival. The filler parts gave time to illustrate the sinking in of military routines and PTSD formation, Amuro & co. slowly breaking with the occasional snapping under the pressure.

Zeta is really fucking unique while still being representative of late 80s anime. Its also very different tonally from 0079 so I don't think it'll burn you out. Just make sure you watch the TV series rather than the movies because the latter changes the ending for the (generally agreed) worse.
