You're also welcome to sing part of it if you feel that the full version is a bit much. I recommend singing at least the part that's after the guitar solo (lines 49-66 in the pastebin lyrics), to help end it on a strong note.

Audacity is what I'd recommend. Pretty intuitive, just hit that record button, sing, and export the audio (under File) when you're done.

The way I normally do it is I put on headphones and record myself singing along to the vocal version, with the lyrics in front of me. Makes it easy to catch any slip ups, and I was never any good at karaoke.
Your recording should just be your voice, no background music.
