Read Negima, then read the currently serialized sequel UQ Holder if you're so inclined.
Both Negima anime are awful and should be avoided. The first is just god awful all around, the second is better but neither follow the manga at all so they shouldn't exist to begin with. The only worthwhile animated Negima material are the Ala Alba OVAs. The movie is not worth watching either.
UQ Holder is getting animated in the fall but I wouldn't count on it being any better than mediocre. The good news is that they would have to actively try to make it as bad or worse than the two Negima anime that already exist.

The reason the adaptions of Negima are so infamous is probably because it seems like they went out of their way to avoid actually adapting the manga for seemingly no reason. It would have been fine if they stuck to the script but they just didn't. And so because neither of the anime were good enough to get past the preliminary haremshit, the more interesting material almost never gets addressed. The only ones that come close are the two Ala Alba OVAs and they cheat by starting in the middle of the series. And even then they only show a bit of it.
The movie starts out following the manga but decides to go off of the rails very, very quickly. Again, for no reason. It really does seem like a curse.

Twelve Kingdoms, I have to admit it's been a few years since I last saw it,
and while it rings somewhat true what you're saying, it's overly harsh IMO.
Overall I enjoyed the series, it's certainly true that it's a slower series that focuses more on world-building,
and that's where most of the enjoyment came from for me, than personal stories of its characters.
The characters were rather realistic IIRC, but in turn very plain and a bit boring. It's not perfect, but I liked it overall.

Well, while I don't like One Piece a lot, I still think that's a bad example.
Supposedly Oda has the endgame planed out, or at least that's what he keeps saying.
They are still making progress and there's an ultimate goal they work towards (finding the One Piece).
Compare that to something like Detective Conan. A series that just keeps going.
Or Dragon Ball Super, a series that should've ended 20 years ago, gets a pointless sequel because the company that owns it wants to cash in on the nostalgia-bucks fad.

I always see people say good stuff about that show (apart from the usual "it's boring" here and there), yet its scores all over the internet remain fairly low for some reason.
But it's not been forgotten, far from that even. It's very often in the anime recommendation lists and also seen quite a lot in people's favorites. It's a show that will always generate discussions, but you will hardly ever see people scream "i'm a Haibane fan", the very low-key style of the show and its thematic content inherently prevent most people from doing that.
I watched it some time ago and thought it was great. It's very cleverly put together, has a layered atmosphere that's played around, does difficult themes justice and has one of my favorite OSTs in anime.
