I think a better question is why didn't he fuck all of the homunculi, literally perfect specimens that you can crank out by the dozen via voodoo bullshit, and they're even fertile.

His endgame was to betray the Einzberns, they would interfere.

the Einzberns didn't care what Kiritsugu would wish for with the Grail, they just wanted to win finally. they're pretty much robots who are obsesessed with it.

on the other hand, the Einzberns deliberately didn't tell him that the Grail is corrupted and it'll fuck him over even if he wins.

Kiritsugu's whole schtick is stealth and subterfuge. It is the reason he says that he thinks he would work better with an Assassin servant and why, in the impossible case where he does in fact become a Counter Guardian, he is an Assassin. Basically, Kiritsugu doesn't need homunculi for either combat or observation because open warfare via orthodox magical methods is simply now how he does things--and he's right for thinking that way.

For those of you who have been watching Apocrypha, remember how Kairi took down an entire squad of attack homunculi (made by Gordes to about the same specs as Einzbern homunculi) with ease? While Kairi is noted to be quite proficient at combat, he is not a particularly outstanding magus overall. Anything that Kairi can handle is also something that the likes of Tokiomi, Kayneth, or Kirei could handle.

Makes you wonder why the Einzberns didn't try cheating in a way that is more suited to their abilities. If they summoned someone like Paracelsus or another alchemist of similar legendary stature, the Einzberns might have been able to just make a core for a new Greater Grail.

You have it backwards, friend. The Einzberns were the ones who had the knowledge of how to make the Greater Grail, because they were the ones who originally possessed the Third True Magic to begin with. They brought the Tohsakas and Matous on board only after trying and failing to recover it by their own efforts alone. The Tohsakas were recruited because they possessed land of very high spiritual quality, and the Matous were recruited so Zouken could design the Command Spell system.

It's why it's interesting to speculate on whether, between the knowledge that the Einzberns still have about the Third Magic, and the help of another alchemist who is even greater than they are, whether they could make some headway. This is putting aside the impossible situation where they summon Solomon and he's able to perform the Third Magic at will as long as he has all ten of his rings.

Yes, but that is not an issue given that all of the homunculi that are made to perfection and bear the name of Einzbern, like Irisviel and Illya, are copies of Justeaze and already function as Lesser Grails. They probably have the qualifications to be made into the core of another Greater Grail assuming the rest of the ritual is there.
