That's one of the problems with the anime version. Check the previous tournaments in the original manga, you only get about 7 relevant fights, every other fight is off screen because fodder is just fodder, even if its design is a nice mecha or a DQ monster.

Super Saiyan Rage's Trunks ability is "Single Strike of Hope", a Beerus card has "Terrifying God of Destruction", a Pan card has "Rage of a Maiden".

The important part is the BACK of the card: under the name of the character there is the name of the transformation state. The back of the cards with the "Sayan that surpassed God" CCA all have "Normal" form.

How did the manga deal with all the future Trunks and alternate timeline stuff?

In the anime (Z/Kai) it seemed like there were at least three or four timelines.
Timeline 1: Everybody dies -> Trunks goes to the past and creates timeline 2 -> Trunks returns -> Trunks kills 17 and 18 -> Some time later Cell kills Trunks, steals the time machine, goes back to the past of timeline 2, changes it, and creates timeline 3. All fighters including Trunks are dead in this future timeline.
Timeline 2: Trunks arrives -> Everybody lives -> Cell never shows up -> Trunks returns to timeline 1.
Timeline 3 (main timeline): Cell gestates -> Trunks arrives -> Everybody lives -> Cell shows up and is defeated -> Trunks returns to timeline 1 (with knowledge of Cell) and creates timeline 4 ---> Dragon Ball Super
Timeline 4: Trunks Kills 17, 18, and Cell ---> Dragon Ball Super
Or something like that. I'm not sure anyone really knows. That shit is a mess.

Yea, I've been watching through it recently and it definitely seems like there's more and more filler the further along it gets. Radditz is dealt with in the first two episodes, The Saiyans take about 12 episodes more. Then the Namek arc is like 40 episodes and I'm currently at the Android/Cell arc which is moving at a snail's pace.

There were a bunch of weird things that happened with the Majin Buu arc as well. Toei originally didn't plan to adapt the Majin Buu arc because Dragon Ball Kai wasn't doing very well in Japan. However apparently it was doing much better internationally so Toei went ahead and adapted an international release titled Dragon Ball Kai: The Final Chapters. Then at some point Fuji TV was having trouble with another anime and asked Toei for something to replace it, so since Toei had already adapted this material they decided to use it as an extra season of Dragon Ball Kai. That said, it needed to be a few episodes shorter to fit into Fuji's schedule so the Japanese version of the Majin Buu arc is actually a little more trimmed down and isn't called "The Final Chapters". Kind of cheapens the whole decision making process if Toei can choose to cut more stuff out on a whim, imo.

You might find more information on Kanzenshuu's forums but my somewhat limited understanding is:

I don't know as I'm not familiar enough with Toei's inner workings or anything, but it sounds plausible. I think Z's animation quality benefited from having so much filler and ATATATATA.

I also read at one point that the reason's Super's animation was so shitty and inconsistent at first was because they had a bunch of artists in training working on it, so perhaps it wouldn't have made as much difference.

I want based Toyo to restart the manga from the beginning of Super and go through the series properly, releasing weekly or bi-weekly chapters. It would be nice to see a traditional manga release with proper pacing and time for each arc. Then they can release manga OVA's or re-launch a superior version of Super in the future once the canon manga gets further ahead while the Toei anime keeps milking the cash cow.

I think stuff like Kuririn, Roshi and Tenshinhan will get one or two pages, and then a fuller stories for 17 and Freeza. It could all be done in a single 40 pages chapter, although especially due to Freeza it might end up lasting two chapters.

It depends on who designed all these tournament fighters. We know Toriyama designed Caulifla, but every other new character has no design credits right now. So, there's a chance they could all be Toei designs and so won't be in the manga. Toyotaro is credited for character original design in the anime's opening, but it could just be referencing his GoDs.
