Anime pleb here, just started watching Gundam 8th MS Team and holy shit is it beautiful to look at. I love all the minutia of prepping and launching the suits, reminds me of the stuff in Evangelion a bit. Definitely a far cry from some other anime people have recommended me over the past few years.

I didn't check how many episodes this had before I started watching, looks like only 12? My only familiarity with the Gundam universe is having watched G Gundam and Gundam Wing like 18 years ago. Do these shows connect at all?

Still, it's an OVA, released over a three-year time period. One episode per three months gives plenty of time for much higher detail and quality than having to put out an episode every week.

And no, they don't connect. Gundam can be pretty much split into two parts - Universal Century, which is all connected in one coherent setting/timeline, and Alternate Universe, series which are mostly stand-alone in their own settings but occasionally have a connection or two.
8th MS Team is a UC side story, Wing and G Gundam are both stand-alones in AU.

The only Gundam I've actually seen is the first half of Turn A. I really really need to rectify this sometime soon.

This is helpful context for the uninitiated, thanks anon. I vaguely am aware of stuff like 0080/0083? I'm assuming that's part of the UC story? Also I'm a little surprised to suddenly have context for the Zaku figure I bought when I was younger, I just thought it looked cool and was impressed that it came with so many accessories.

Yeah, 0080 War in the Pocket and 0083 Stardust Memory are also both UC sidestories. The main UC storyline is the original Mobile Suit Gundam -> MSG Zeta -> MSG Double Zeta -> Char's Counterattack. All done back in the 80s.
There's a bunch of charts that show how it all fits together, but I'm afraid I don't have any handy atm. Quick search should bring some up.

The original MSG is famous for having tons of particularly QUALITY animation, even for its time. If anything 08th MS Team is quite remarkable for having much better animation quality than most all Gundam series. Well, pre-millenium Gundam series.
Still good shows though, very much worth watching.
