Why don't shows have differing OPs and/or EDs every episode

Waste of money. Most people skip OP/ED anyway so why would you bother making them special? Hell, the BDs usually remove them entirely.

That's the shit I skip. Music is trash in about 90% of them. There's a few good ones.

Sore ga Seiyuu changed the talk segment in the ED every episode.
18if technically has a different ED each time, even if it's lazy as fuck.
Ninja Slayer did it too.
There are also plenty that change things up with the animation once or twice instead of every episode, like Matoi and Stella no Mahou.

But the reason is that OPEDs are allowed to be high quality because they only have to do them once.
