After Episode 10, those scenes felt like a red herring. Personally, instead making that episode about Victor willing to give up the ice for coaching Yuuri, they should have him conflicted about choosing between leaving the ice or continuing on as coach instead cramming all of it in the last episode and do it so unconvincingly that it looks he is doing it to keep Piggy around and have him coach and be a competitor at the same time (which is against the rules anyway, especially the two competitors are from different countries).

Personally I share the disappointment over ep 12 (and the last minute conflict in ep 11) because it was resolved cheaply, as as you said it's not even possible to coach and compete at the same time. So even if I knew it was coming and I can understand Sayo's intention it doesn't mean that I think it's the best decision for him.
