Sea God arc was meant to parallel Griffith in contrast.
Griffith defeated a large mythical monster by doing nothing and was rewarded a kingdom. He obtained his life long dream and changed the world.
Guts defeated a physically large monster with his own strength and will power and only received some thanks by some mermaids. This will be rewarded by obtaining the small goal of regaining Casca. It fits within the themes of duality present in the story, and could not have been removed.
The issue is that it took about seven fucking years to get through.

Because one of the things that makes Berserk unique is that it reverses common hero and villain tropes. In most other stories, Guts would be the villain and Griffith would be the hero. So it's an entirely logical position to take, if perhaps not true to Miura's vision (whatever the hell that is at this point).
