There is no conclusion to their love story but it's pretty much confirmed that they romantically like each other. Gilbert just wants Violet to experience traveling the world since she was deprived of almost everything during her childhood being an ex soldier and such. The anime might have a different end though since it already begins with Violet wondering what Gilbert meant by "I love you". That confession scene didn't happen until the 2nd vol of the novel
