Elizabeth is a demonic girl who was sealed many years ago because people were afraid of her, but all she wanted were friends. However, she has dangerous powers which allow her to steal the souls of people, which turns them into human dolls; she doesn't understand why that is a bad thing, since she only does it so "her friends" don't leave her. Akko accidentally unlocks her seal, which leads to her becoming attached to her. Diana distrusts Elizabeth from the start and they have a troublesome relationship. Eventually, things go wrong with Elizabeth which leads her to go on a rampage and steal the souls of the students and turns into a big monster, eventually she gets defeated but instead of accepting her defeat she steals Akko's soul and tries to run away into a dark dimension world thing. Diana chases after Elizabeth and in the final confrontation is forced to finally call Akko "a-a-a f-f-friend".

Here is your S2 main plot. No heavy end of the world stuff but dramatic enough.

She was just kind of smug and prideful when magic got brought up, she's still humble when the teachers practically fellate her ego and she can be a bit pushy when she thinks she can carry the weight, but she's quick to take responsibility for her fuck ups and help everyone, not only that, but any witch that's a fan of Shiny Chariot can't possibly be a bad person she's far from a bitch.
I don't really know why people say OVA Diana and anime Diana are different; they're pretty much the same, the only difference is that the anime showed her side of things, gave her more than 10 minutes to develop and to let her cold demeanor towards Akko go from curiosity, begrudging respect and friendship.

It's not a matter of power-level, it's a matter of personality. Other than Akko, Diana was the only one willing to go stop the missile from the start; everyone else was giving up prematurely. Diana has a strong sense of responsibility, a drive to help others and the "believing heart". I guess Amanda could also work in a leading role, though; her rebellious disregard for authority is also a lead-like trait.

You guys have shit memory. The pamphlet for Luna Nova even mentions that they have an stable to keep familiars. The novel for kids also has a chapter about familiars. Diana's familiar is a unicorn, Hannah's is a crow, Barbara's is a mini-mermaid, Lotte's is the fire spirit. Akko can't summon any familiar (at that point she still couldn't use magic very well). Sucy wanted a familiar too dangerous so her request was denied.

I think what it boils down to is that for the turns Diana goes through, we needed to be somewhat empathetic for her already, so they made her more humble. And why not? Hannah and Barbara are smug assholes enough for the three of them. Diana suffering from hubris works fine in a simple short story but 25 episodes is very drawn out. It makes sense to soften her character in order to give her more nuance when she takes an active role in the story. "Mean girl caricature who bigs herself up so much it backfires" isn't really going to cut it.

What's so bad about Naruto's character? He's pretty unoffensive to the senses if he isn't constantly going BELIEVE IT like in the dub.

In the OVA continuity she outgrew Chariot, in the TV canon she still liked Chariot deep inside. It's a combination of various factors:
-TV Diana is a significantly more competent than OVA Diana
-Luna Nova was still a respected witch school in the OVAs, in the TV series even other witches make fun of Luna Nova
-OVA Diana went to Luna Nova because it was the best witch school and she wanted to show-off; TV Diana went to Luna Nova because it was Chariot's school even if there wasn't much for her to learn in it.
