Iwa means rock (hence the Rock Humans being the Iwa-Ningen in Nip) and suke is a common suffix for boy names in Japanese. Josuke is just Jo from JoJo with suke thrown on the end, which in English would be roughly approximate to Joey or Johnny. In the same way Iwasuke if translated into English would be Rocky. The reason Josuke and Norisuke scowl at Tsurugi after he names Iwasuke is because not only is it a shit pun it's also teasing how they both have suke in their names.

I just started watching JoJo (the 2012 anime) and it's fucking lit, easy to see now why it's still a successful series years down the line.

I was worried after part 1 ended that I wouldn't like the protagonist of part 2 as much as I did Jonathon, but I'm 7 episodes into it and I'm convinced that Joseph is the most entertaining protagonist I've had the pleasure of seeing in any media up until now.

I just finished Stone Ocean.
So since Pucci was killed by Emporio before the loop could be completed, that being before the point in time when Jolyne sent him off on a dolphin's back, the universe automatically sped forward to a third timeline where Pucci never existed, and everyone has slightly different names. But since only the living can be reintroduced to the timeline, that means nearly nothing in the rest of JoJo so far happened, since there's no DIO in this new timeline.
Also, is this new timeline the same one as parts 7 & 8, or is that yet an even further timeline?

Not quite. The only things that change in new timelines are related to the people Pucci kills. Because Pucci died before the full loop, it all just defaulted back to the original universe but with Pucci erased instead of Jotaro and Jolyne. Everything still happens exactly the same but without Pucci, so DIO never writes about him in his diary meaning Jotaro never learns about the Heaven plot and doesn't have to be on the defensive his whole life and can actually raise Jolyne properly. Since Pucci isn't around and with a different upbringing, Jolyne (now called Irene to signify being free from the Joestar curse) has no reason to end up in prison but fate still dictates that what happened once must happen again, so she still has to meet the whole SO crew, but fate has changed to account for Pucci missing. Parts 1-5 happen exactly the same except Jotaro in Parts 4 and 5 was probably a lot more chill since he didn't have the looming spectre of DIO's friend nagging at him all the time. 7 and 8 are a different, entirely unrelated universe, since 6 was intended to be the end of JoJo and Araki felt like he'd reached a creative peak and couldn't innovate any further unless he started over with a clean slate.
