Actually, Uzbekistan was the worlds largest exporter of cotton for a time, but then they couldn't keep it up as well, but it's still sizeable (5% of the world production), so the Soviet plan worked. They also use the water for growing crops and a quarter of the GDP comes from agriculture.

Nomadic people are not as idyllic as presented. They are can be assholes who would have small clan skirmishes a lot until someone either took control of the region or enough factions get large enough for actual war. Islam really didn't do a lot to unite them because Islam is more like Protestant Christianity then Catholicism or Eastern Orthodox. It's mostly dominated by tribal and cultural beliefs weaved into whomever teaches them Islam. Most of the time it would be someone with connections to either a leader, wife of someone important, trader, or what would be called an ambassador. The caliphate would usually just send people out with a book saying convert or die, be subject to jizya, or be isolated. Less trouble then waging war on small nomadic tribes. Eventually people convert out of belief, annoyance, or benefits like support in ending the guys who won't convert and have been your rivals for centuries. So your culture can survive unassimilated unlike Catholics or Orthodox which would absorb cultures and leave only traces of the culture in itself in the forms of feast days and newly annointed saints.

Most steppe people can have some weird beliefs due to the tacking on of the more cultural Islam. I'm not very well educated, but I do know of some people from the Middle East who traveled there before settling in Michigan or their grandparents and other ancestors knew them. The manga is more focusing on the good and interesting parts because generally these people are very interesting.

In Europe you usually have German farmers, city dwellers and nobles on one side of a river and on the otehr side everyone is French. Though even in europe you used to have more difficult situations like Galicia-Lodomeria which had a mostly Polish nobility and a Ukranian peasantry. In any case it was usually not a problem to mary among your social 'caste' disregarding ethnicity, but disregarding social status an absolute taboo.

I would think you have a similar thing in central asia but with more complicated ethnic lines. For example nomands might be Turkic while farmers are Iranian, yet they intermingle because of mutual dependancy. Additionally a lot of people would speak (or at least have passing knowldge of) different languages, I'd imagine the lingua franca to be arab, thus diminishing 'ethnic lines' even more.

No, they are Central Asian Turkic people, and Iranian (the Tajiks). If by Mongols you mean nomadic people, yes, but they are ethnically, linguistically, and culturally different peoples. The same can be same in regards to Middle Eastern people. Turks have nothing in common (as far as I can tell) with Bedouins or Assyrians, beside an shared story of invasion, plundered, rape, and ruined cities.
