I have trouble with most VNs because I can never self insert as the protagonists, will watching the anime or playing the VN lead to me loving her more?

They are a little different. VN Sora is more obsessive and desperate, but the VN also has scenes on her perspective that really make her situation more relatable. Anime Sora is more sexually aggressive, and the confession scene is much better in the anime. You can go either way, but both are worth watching together since they are different enough and with good production values.

Embarrassingly this sounds much more like my type so I'll start with the VN. Artwork like >>159385490 is a million times more attractive than any ecchi anime scene anyway.

Also, the sex scenes are kinda better in the anime besides the art because the voice acting during the VN scenes is too silly.
