Ubel Blatt is about focuses more on Politics
Goblin Slayer is about Killing goblins, laced with your regular LN wish fullfilment stuff.
Dungeon Meshi, above all else, is still a lighthearted adventure about a band of friends and cooking in dungeon.
Every one of these series has a main character/group of characters that it focuses on
Dark souls doesn't have that. At it's core, it's a story about various people and how they deal with entropy. Be it gods trying to stop it, kings trying to save themselves, or regular people who give up, accept it, finish their business before it ends, or the very few who fight tooth and nail to stop it, impossible it may be.
It's one of the very few stories that can only be told as a game or at least an interactive medium. In addition to letting the player experience the same emotions a chosen undead would, it also invites the players to participate in a debate about entropy. Whether or not this dying world is worth saving, knowing that it would die again not long after. After seeing, helping, ignoring, or killing the various characters in the world, who has accepted the state of it. For this debate to happen, the Chosen Undead, Bearer of the Curse, Ashen one, whatever, needs to be a literal blank slate. The player involvement is key, the world is made with that in mind.
It won't work as a passive medium the way Anime is.
