Well, it's pretty obvious. If they have a yandere she'll flip the fuck out and start killing people or at least try to ruin their lives. Tsundere's are easy to write and and generic cash cows, there's no risk and they won't take over the story.

Tsunderes are more accessible than yanderes

Tsunderes are a universal concept and much easier too. Not to get philosophical, but they are the living example of "the hedgehog's dilemma" and such, anybody can identify (sort of) with the idea of what a tsundere is.

Basically, it's easy to write a prickly girl. It's harder to write a crazy one.

they're plot devices used to artificially extend a romance series but without actually doing things an actual romantic couple would do. Because Japan is so far gone normal dates are foreign to them now, much like a pregnant woman.

This. Tsundere is more of just a way you speak to someone, yandere actually affects their actions and almost always leads to some sort of conflict that the writer will have to handle.

Tsundere is easier to do because it is typically added to a bunch of character traits, not the defining trait.

The entire plot is because of her love, she just figures mindbreaking him is maybe the best way to win him back after what happened in the past. Her obsession is to the point where the MC is rightfully suspicious if it seems she isn't trying something since she herself outright states she thinks of nothing but him.
That and she gets to see his dashing figure in action while he tries to stop whatever plot she directly or indirectly set up.
