Because the ending was more than just the final fight. It was the way the plot had lots of threads going for it that the ending then neatly wraps up in a very satisfying way.

I feel One Piece has potential, but after decades of build up and having way too much going for in general there is absolutely no way Oda is going to come up with any one ending that wraps the whole thing up in a satisfactory way. While FMA had a bunch of sub plots, it was kept relatively simple with a firm grasp on the central plot thread.

FMA wasn't WSJ, it was monthly and thus it's pacing gave Arakawa time to neatly wrap up everything in a nice way.

Other mangas don't get that luxury and mangaka have to slave away and milk their shit to keep WSJ thriving
