It's like how I was told of someone having a motorbike accident and survived due to his helmet, but both his legs were severed by the impact alone.

Also, her original limbs were literally useless for civilian life. She just has giant knives for hands. I am sure Genus could gave her something better, but the hands seem functional. The right hand is human-based and capable of fine tuned movements, while her right hand was deliberately given strong grip for heavy work. I am sure she could have human hands for both limbs if needed to.
