Don't. The series isn't made for you if you don't want to read it. It's the nexus point of the entire franchise and neither adaptation is up to snuff. If you're dead set on avoiding it just find a different series to enjoy.

The problem is that if everyone actually followed this advice the entire Fate franchise would've withered away and died a long time ago. On the other hand because of Fate's popularity spread characters like Saber and Rin are so prevalent in the anime community that if you care about anime you eventually have to get into Fate whether you want to or not.

You don't have to read the visual novel anymore. Just watch F/Z then the UBW done by ufotable. F/Z covers the same material the first route of the VN does, UBW covers the second route.
They're both really great.
Also there are Heaven's Feel movies which cover the last route coming out eventually in our lifetime.
Don't listen to anyone who says F/Z or UBW are crap, they're both great.

Then any other spinoff in any order, it doesn't really matter when you already watched stay night UBW. Hell, you might as well even watch the Grand Order OVA after finishing UBW.

Also, if you began from Zero you already fucked up and there's no way you will ever truly enjoy stay night so you should give up. You are already a secondary.
