Those arcs are essential to Guts as a character. Not to mention those wouldn't work very well outside of the chronology presented in the manga. Having Golden Age between the two is the only way, and having these arcs before and after it makes the Golden Age that much better.

I really want to start reading this, but the likelihood that the mangaka dies before finishing always puts me off.

Thank god I'm not going crazy. Reading and reading and reading and I get to 334 of like 349 and I'm like"How the hell is this going to end in less than ten chapters?". Kind of upset that it isn't finished yet, but glad it isn't a poorly written, rushed ending. Well, the schedule of a mangaka is particularly overbearing and intense. You're basically just a workhorse for a long time that's practically expected to shit out your work on demand. You do nothing but work and work and work and work. Since you have to meet the deadline as soon as possible, you really don't have that much else to do other than just work.

I assume that the Hiatus master mangakas such as Togashi , Miura, and Hagiwara have all burnt out on being a workhorse. I work a job that's less demanding and even I myself wish I could just do nothing but rest all day every day. I could only imagine how these guys feel after literal decades of working nonstop. Remember that all three of these dudes have been doing this since like the motherfucking 80s. They are DEFINITELY tired. It's even worse for Togashi as well since apparently his body is in pain now. I dunno exactly about Miura and Hagiwara, but they just all reached a point where they can rest with no worries and I'm sure they've gotten long tired of their demanding schedule.

This is also why we're seeing Oda taking more and more breaks now. He hasn't gone into full hiatus mode, but it seems like he's also reached a point that he's gotten really tired of this schedule.
