How about this scenario?

If Saber COULD have a child, that child would either be half Servant and thus be counted as a Saber with mediocre stats in the HGW system and the Master they are paired up with would probably be determined by whoever accepts the pact, so it depends on what they get as a Master. But this could also be that they are just a magus who got put out of harms way because Shirou and Saber wouldn't put their child in danger so you'd get a Shirou-tier Master who doesn't have the generousities given by Rin not just killing Shirou when she can, Saber being a good Servant downgrades or the billion times that someone could have just murdered the shit out of him.

Rin and Shirou depends on if the child is given crests and a bunch of gems to use as catalysts. They're probably the best Master but they might just fuck up and end up having sex with other Masters.

Sakura Shirou would only do good if they lived with another Master and said Master didn't know they were one too.

That's wrong. Any scenario where Sakura is freed from Zouken she either finds her own mentor and trains, or like in HF Normal, trains herself and became the teacher for Rin's granddaughter.

So that should tell you about Sakura's ability if the next head of the Tohsaka family went to her great aunt for tutelage instead of a former head or her parents.

Sakura takes things seriously if given the chance.

Honestly, both sisters have a good chance. Rin has the crest, and that will give her kid a huge leg up, but Sakura is the best at actual teaching.

Rin is a genius, and expects her student to get things immediately, but can't really work on a novice's level. If the student is immensely bright at the start, she does great, but if her student isn't up to her level of aptitude, she struggles.

Whereas Sakura can work with both a sharp student or one who needs extra guidance. But can be stern enough to range in the student who is the type to misbehave.
