Because the MC is meant to interact with the powers of everyone else, which means the physics of his power will be explored more deeply and needs to be something the writer needs to understand to some extent. If the MC had a quirkier power like say... "separate water into hydrogen and oxygen" the writer would need to understand chemistry very well in order to then have said character fight water/fire/electricity/etc. user.

One of the reasons why authors give MCs or characters they want to develop such binary abilities is because they "train" the character so they can eventually defeat the villian. Example: Villian has a shield, MC cannot punch through it

Theoretically, when Gon became Gon-san, he got to the peak of his potential, at the cost of losing his potential forever, which meant not using Nen again. His body got that damaged because it was too much power to suddenly handle, so Alluka could cure that, but losing his Nen was the price he agreed to pay, so he can't get it back. It has been theorized that he could relearn Nen from the beggining, and get a different type of Hatsu, but Gon hasn't appeared again since the Election Arc, so who knows what could happen.
