It's all about demographics. The magazines that manga are serialized in target specific age groups. Shōnen is of course eaten up by young people and those whose tastes never matured. The demographic which you'd think would be most favorable towards college-aged stories, seinen, actually contains the least because it's targeted towards mostly salary-men. They don't want to think about college or get nostalgic or regretful towards some rosy college life. They'd rather have some escapist BS or more mature comedy. There's nothing you can't do with younger protagonists that you'd need college students for so fantasy manga don't need them. Note though that there is a market indirectly targeting them, that is the more sophisticated manga that doesn't devolve into tropes but rather explores bigger ideas or is more rooted in realistic portrayals. These are usually serialized in more specialist magazines like Manga Erotics F that don't have such a large readership.
