Re endless Eight, if the differences in the dialogue are enough that it doesn't feel too repetitive or boring then you might as well just watch the whole thing. That's what I did on my last rewatch. Otherwise give it a break, and when you come back to it skip to the last episode.

Honestly, it wasn't the first nor the last time I watched something Kyoani made just to appreciate the care put in the production values, but not everybody likes that sort of thing. If you want a good reason to watch it, I think it's nice to see how the subtle and progressive changes in the way they handle each episode reflect the aggravating psychological state of some characters, something which will end up being relevant for understanding the movie in a way. On the other hand, it's also true that you won't miss anything plot-wise by skipping it. It's your choice. Maybe watch the first couple of episodes, then pick up the third one and if you feel like you're bored out of your mind and don't care anymore, just skip to the last one.

It's not that simple. SW Prequels were done after the original trilogy. But this an adaptation and the original books mostly follow a chronological order, also they re-run the whole thing in chronological order.
