The whole build-up behind Gaara is what made it so satisfyingly. Everyone had an idea of how strong Rock Lee was when he had his mini-match with Sasuke. However everyone kind of wrote him off as some goof that got lucky.

The fact Gaara didn't even make eye contact with Lee while he was attacking made it seem like he was damn near invincible.

Then the weights came off and literally blew that cunts mind. You could see it in his expression. Now goofball is running at the speed of light and this guy's eyes can't even keep up. He proceeds to get fucked like a helpless child.

for guts, there's definitely Akagi. Not only he has incredible ability to read people and plan ahead (and see complex possibilities), he has the self-confidence and focus to concentrate on his matches without letting things like the fear of death or material rewards affect his game.

There's also Ten, his final round is exceptionally beautiful to me in that many parts of his manga can be related to that final round; it was through his endurance, his habit of persevering through pain and adverse situations instead of running from them or breaking down from pressure that allowed him to find a way to win, and boy, was it awesome.

Nozomi from Keijo also counts, being not only persistent as a roach, but analytical (and self-confident about following her instincts) as well, all of it due to her poor lifestyle. One example being how even when she was beaten up before starting a race, she estimated that she would still have the most strength at the end of the match, against her opponent who didn't realize that fact before it was too late for her. Also, Non in her last match (untranslated, so far).
