Grand Blue is quite a bit better in my opinion. Iori is pretty dumb, but in more of a fun way whereas Akihisa was really intolerably retarded at times. Also while the Akihisa/Yuu dynamic was pretty fun, the Iori/Kouhei dynamic is really damn good. Plus while Chisa can be pretty mean, she isn't nearly as bad as the violent bitch in Bakatest.

I'm not really a fan of characters being stereotypes to such an extreme where they just become full blown retarded and dysfunctional. Akihisa was stupid to the point of unrealistic and annoying while Iori actually feels like a real character. And the females have a lot more personality in Grand Blue as well.

No, the true signs are that his/her chest is never shown, even though all the other characters showed their bare chest or swimsuit, the body type, yes, but also the face is the typical face that the mangaka uses for females, and the way he/she moves. The liking of Iori is just a partial tell, given that we have gay characters already, but It is not quite the same when the gender isn't clear and then the character is shown to show interest on an unexpected gender.
It is the classical foreshadowing of the gender not being what was originally supposed by the cast, it goes by the book on this and It would be easy enough to find several examples.

What I am hopping for is that the flags are raised to be sunken, like they start thinking he is a she, and then he confirms he is a he.
