The American Civil War had already ended when the Japs abandoned the sword. A lot of its appeal comes simply from the fact that it was still used in the modern era and as a result a lot more stories of it still exist.

Which was the whole point of the differential tempering on Japanese swords, you can fix a bent sword.
A shattered one? Not so much.

That is not to say that a Katana is anything special in terms of metallurgy, the Japanese learned sword making from the Chinese and they had already moved on to far more advanced crucible steels before Japanese swords had even turned into something that looked like what people today would recognize as a Katana.

If you took an exemplar specimen from European swords and one from Japanese swords they'd be similar at least.

Take your gif. for instance. That posture and stance just oozes confidence and sophistication, as if it's clear that the wielder knows what they're doing. Replace the katana with another sword such as a rapier or broadsword and it would still look just as cool.
