That's exactly how I felt a few years ago when I was about twenty, thinking I was so grown up because I could enjoy moe all the time without feeling insecure and being so mature that I couldn't see then entertainment value in shows like Hellsing anymore.
Then I gradually grew up for real and learned to appreciate more or less anything that had genuinely redeeming qualities that I could find enjoyment in. Like Hellsing.

All of the vampires sucked and the crusading forces got immediately fucked as soon as they set foot in London making the building of their characters from the previous episode a waste of time. I can never enjoy Hellsing or anything like it again, just as you say, but I tell you for damned sure as time goes by I appreciate the first anime's sountrack more and more.

Thing that annoyed me most was how the entire thing was remembered as some random terrorist attack and the Major was forgotten.

Once the casualties from a terrorist attack hit 8 digits, it's going to be remembered for centuries.

The entire ending was a miss for me but it's a small blemish on an otherwise fun and surprisingly philosophical show.

Not saying it's smart but in a show about Dracula and a big titted policewoman fighting Nazi Zombie Werewolf Voodoo Robots, it's strange to stop the action for tens of minutes at a time for monologues on human nature

except there are shows (or manga) that don't seem to age well; in Hellsing's case, the manga was old, there weren't as many anime/manga as nowadays. Age isn't a problem itself, but there's the possibility that whatever someone might've found fun in one anime/manga, he/she will find even more fun in another as new ideas/concepts get explored.
