I like Jinbei as much as the next guy, but let's be real here. At a writers standpoint, it makes no sense to make him stronger.

Pre TS Sanji's kicks were strong enough to break 24 baseball bats and that's straight out of Baratie (confirmed in SBS). You think three years later, after running and running from trannys and having his legs get so fast he can literally fly, coupled with the fact that he's traveled most of the world and has gotten consistently stronger from tough opponents, he can't grill Jimbei with some multiple diable Jiamble hits? Nigga can probably break hundreds of wooden bats with a single kick. I mean fuck, don't forget he is very skilled in hand to hand combat with knives and is on an island entirely made of food based opponents. Also has some god tier Observation Haki. Not a sanjifag by any means, Luffy and Usopp are my favorite strawhats, I'm just sick of people undermining his strength for shit reasons.

And yes that punch likely involved water, considering he uses water particles in the air. Of course Sanji would get wrecked literally in the water with Jimbei, so would the rest of the strawhats. My nigga he has like 10 shadows in him from those marines at best. Moriah has no Haki as far as we know and is extremely immobile. Easily one of the weakest warlords. Jimbei incapacitating him in one punch shouldn't surprise anyone. I'm not saying Jimbei won't progress, but the people you mentioned that are strong AF have nasty devil fruits that can always be improved with the exception of Garp who has likely depreciated in strength. I doubt he could still go toe to toe with Roger in his old age.

Jimbei has mastered fishman karate. That's it. The only room he has for improvement is a DF (which would never happen, Jimbei being able to swim is way too useful) or just keep beefing his Haki, which is what everyone else is doing anyways.

Sanji has crazy ass genetics that can light his limbs on fire (and likely do more than that) very good observation Haki, and kicks that are strong as all hell when they're not even beefed up.

My guess that she was 74 was a little off. Having babies for 42 years is longer than normal, but this is One Piece, so not too weird. I was right her youngest kids are in their late teens -- all the little ones, like Anana and Anglais are grandchildren. I also thought Opera was a set of quadruplets, not quintuplets. Have we seen FIVE of them? Maybe one's dead. I'm glad we got their names, though, I wonder if we can accurately guess which is which. I'm actually surprised she has even higher sets, though. To me, this means Oda probably didn't like the idea of half the characters having one or two duplicates, so to offset this he made some of them have a TON of duplicates. So, really, there's not that many sets, some of them are just high numbers.

Does anyone else call themselves a master of fishman karate? Besides hack which lets face it, isn't all that impressive. BM referred to Pudding as the big sister of the younger kids, who also referred to BM as mama. The idea that these must be grandkids because Brulee looks old when she's also twice as tall as normal humans and other canonically older kids don't look as old as her isn't worth speculating, it's just stupid.

Why didn't the revolutionaries do something during Drum, Alabasta and Dressrosa? All of these arcs had to do with kings and corruption. I thought that was their schtick
