Because she's a likable character. I don't get the obsession with power relations; she's devoted because she loves him and he changed her life for the better. She isn't super nice to him (Emilia is nicer, to be honest) and doesn't do everything he says (she's gone behind his back and rejects his proposal in ep18). People found the character endearing, even though shit got cut out.

Subaru isn't the most likable person, but he really isn't hateworthy. He wants to do good and has done some good. He has an immature and egotistical streak on top of screwing up, but he had just been some teen loser before being tossed into a magical world. He has worth, he has worth when he admits he didn't believe he had any at all. He has to make that manifest through effort and he has someone behind his back.

Subaru has, on multiple occasions to her knowledge, reacted on knowledge he couldn't possibly have. Some relating to her own personal secrets that she doesn't tell anyone.

Rem knows that's not a coincidence. She's thought about it before, and she's connected his behavior to the change in his scent. She was also listening when Subaru stopped in the middle of his words, his scent increased, and he complained about not being able to talk about something.

Rem only has a very loose and vague understanding of Subaru's ability, but it's still some kind of understanding.

Well, she does exactly that. Every step along the way, she lets him know she's there and that he can rely on her. When he has his mental breakdown, she takes care of him the whole time. She does her best to help him whenever she can and whenever he allows it. When she doesn't like his attitude, she tries to drag him aside to correct it

Of course, the help she's able to give is a little limited by the orders Roswaal gave her, which she's not allowed to disclose unless Subaru figures out about it, but she did try to drop hints.
