Perhaps you don't realize this but Jews didn't show up in Germany with German names, they were at one point ordered to take on fixed family names, which were German obviously. If you're German you'll often recognize these because some of them are irreversibly associated with Jews.

But I'll try to contribute to this as much as I can.

In my honest opinion, Chris Evans should 100% be casted for Erwin. Literally no one else could portray him better. Chris was made to play two people: Captain America and Erwin.

For Levi, I believe that Erza Miller would be best fit for him. I know that Levi would probably be fully americanized in an American adaption, but Erza is perfect for Levi who is supposed to be apparently Asian. Well, not too perfect. I don't know if Erza could play Levi's character that good, but he definitely looks the part.

Melissa Benoist should be casted as Historia/Krista. She's definitely cute enough and spunky enough for it.

I'd say that Dakota Fanning could make a decent Annie. I'm not too picky since most female actors can't bulk up, but it's not like she'll be seen half naked or anything. In reality, I'm sure that the overrated Jennifer Lawrence will play as Annie, but I suppose that she wouldn't be the worst choice.

Yaeger sounds like a transcription into English and comes from a German surname, yes.

I'm not saying these are all Jews by the way, the original point was more related to me seeing the Madagascar threads a few months ago and thinking it was interesting and made the connection after reading the thread and looking at some of the names of the characters. I don't know anything about this show.

I am Jewish, anon and have one of those German names. I have never met another Jew with a name like Ackerman. It's as you said; there are Ashkenazi names which came to be ethnically Jewish despite having German roots. My point was that none of the characters in AoT have names that sound Jewish. They're just generic German-sounding names for the most part except Eren's who was obviously named "Yaegar" aka "Hunter" intentionally.

Your personal experience isn't that relevant when you can just Google Ackerman and find the Jews with the name yourself. No name other than Hebrew names sound Jewish, Ashkenazi names are still German.
Also, as a Jew you should know damn well that Levi is an actual Jewish name. Now add Levi, a clear as day Jewish name, and Ackerman, a common Ashkenazi name, and tell me with a straight face you can't understand why someone might start asking questions.

Yes, I can use the internet too. An excellent retarded point that there are Jews named Ackerman. You're sure to find some Jews named Smith too, but that doesn't make it a common Jewish surname. Not as common as Cohen, Roth, Rosen, Epstein, or Goldberg.
