I personally am a fan of "A mortal's Journey to Imortality"

This is probably only interesting to me because I've read a lot of chinese fantasy shit, and this one decided to focus the story on a "mediocre" cultivator with no real skills beyond the full knowledge he's a small fish in a huge pond.

It's a pretty good story because you see the MC get more and more devious, it's not a story about overpowering his foes, it's about out smarting them and straight out hiding from them if he has to.

Because of his "trash" potential he's forced to expand 10x the effort of everyone else to achieve the same result, and as a result he spends a LOT of time skilling up support skills such as mortal martial arts techniques, formation and magical techniques, basically he decides since his cultivation will never really be very good and he'll never be able to "over power" anyone, he'll out-skill everyone. and spends his time stealing L33T eq, manipulating powerful people into backing him, hiding his mediocre power level and viciously assassinating people much strong then him just to prevent having to fight people in a straight up fight.

It's actually a refreshing story because instead of the super-powered badass cultivator who can battle people 3 levels higher then himself, we get a story focused on one of the mediocre background characters who slowly but surely progresses toward the peak with his whits, patience, and connections

I get the feeling that a lot of isekai authors are not very widely read. They only read otaku fiction, so they only know how to use literary devices and plot elements found commonly in otaku fiction. Thus the LN/WN writing scene overall is an inbred mess of the most popular tropes, including slaves and cheats and JRPG guilds.

Saihate no Paladin is one example of a work that bucks the trend, and it's clear from the afterword how widely read the author is above and beyond otaku fiction, and above and beyond even fantasy genre generally.
