I really liked Rokka no Yuusha's first episode.
It was a pretty exciting and great start.

Little Witch really stuck with me recently, I thought the first episode did a really amazing job of capturing the hope and magic the series tries to exude. My favorite first episode so far is Nichijou though, it was such an energetic and fun thing to watch and made me crave more of the show.
