The appeal is in the idea that someone would be so obsessively interested in you which makes you feel desired. It also removes any worries about infidelity. There's also an aspect of masochism.

Additionally and probably the most prominent, people who like yanderes are generally not the most confident and gumptious people around, so the idea of someone (especially a cute girl) always taking the lead is attractive and relieving; this is also the same reason most women want the "manly" type.
