Typically the build up is focused on because that's where the easy drama is. Even the shittiest romance tends to draw people in because humans are hardwired social creatures. It's much harder to keep two characters in a healthy relationship and still maintain a good sense of overall conflict. Especially if your main conflict until then was between those two. The will-they-won't-they tension is a powerful narrative force to keep people reading.

Your Name is a bit different because there's not actually much of a character conflict between the leads. There's some metaphorical head butting early on as they settle into the body switching, but everything that would cover the typical romance drama is in a fucking musical montage. By the time it ends and we get to stuff like the Okudera date, they've already fallen in love. The main conflict in the movie is the nonhuman circumstances that separate them rather than any human driven drama. That's what keeps people invested, the two MC's having to overcome all this bullshit to be together.
