Because she is complicated (like life) and is actively trying to change life itself from being shitty, boring and black and white to being insane and colorful and fun no matter how much havoc it wreaks. DESU the only reasons anybody ever cooks up to dislike her to begin with (and only animefags have this issue) are that her personality is grating in the beginning and she is definitely a bitch.

But the thing is, she is not a bitch inside, she is a broken person who has faced a hard reality very few people face head-on and she did so at a young age and it destroyed her. Why give a shit about inane talk about tv shows or whether society says it matters if you change clothes in front of boys or whether people think you're crazy for trying to follow your heart.

She faced bleak reality and people's own insignificance and smashed through it with a sledgehammer. Even the people quoted as mistreated by her actually have their lives made far more interesting by her existence at the end of the day. Even Mikuru falls asleep on her shoulder and is jealous of actual maids. Mikuru likes it. Haruhi pushes her luck with that at one point and is borderline non-funny abusive and that is a defining character turning point. The fact that the whole show is out of order sort of makes that hard to see for anime-only people.

She almost gets jacked by Kyon and after this point she softens considerably. She learns what it means to just force things and gradually becomes able to truly treat her friends to fun madness that isn't scary.

She is not just annoying from Mikuru and Itsuki's perspectives. She's TERRIFYING.

Disappearance lays most but not all of this on the table. Life without her SOS Smile is shit. Yeah Mikuru has a quiet, normal self but is a nobody. Nagato shouldn't even exist at ALL (but plot). Itsuki is a nobody who is unnoticed by the girl he likes. Kyon's life is nothing to speak of. And no, Nagato or Mikuru are not even runners-up as love interests for real. They are Haruhi's daughter and sister.

Life without her is dull, colorless, and dead. She is the antithesis of a 9-5 job, mortgage, and retirement home life. In worlds where her enthusiasm and fun is still sorta there but she is de-powered and helpless to REALLY change things, she just doesn't have that ability to make the mundane into vitality and joy. Her rough edges are sanded off and that makes her, at the end, just another person, she's just the most cheerful person at the office party.

Improvement, change, going outside of your comfort zone, asking your crush to the dance, singing out loud, and quitting your reliable job to pursue your real dreams are not going to be easy to deal with and are scary and do some damage. This is Haruhi. You fear her and cover it up with petty, small-minded complaints.

You need a Haruhi to pull your fucking blanket off, make you get out of bed and go have breakfast with your friends, and go to the party that night. Even if she has to throw a glass of water on you and open the blinds to the glaring sunlight to get you up.

the series is for people who wanted the Yuki end in Disappearance (hence the name). But they do take it up to 11, so you definitely have a point.

Either way, I felt that for the parts where it's just Yuki, Kyon, and Ryoko bantering, the show was actually pretty good.
Being slower paced, and with no Haruhi around, made for a better Yuki and didn't bring out the Taakii as much.

What Yuki-chan should've been like is actually following the movie with Kyon choosing to stay in the normal world instead.

It would've been slightly sad and melancholic (ha-ha), with Kyon feeling a tinge of regret about his choice. He probably would end up drifting away from Haruhi, now that he's not a person of interest beyond retelling his old SOS adventures, and he'd have to work really hard if he wants to repair his relationship with Mikuru and Tsuruya.

But it could've also been a nice slow-paced romance between Kyon and Yuki, with Asakura being the comic relief (relative to the quiet Yuki and the straight man Kyon) - close to the character dynamic in the real Yuki-chan, but with Yuki not being this much of a fucking moeblob.

But it would've taken on a pretty damn different tone, and the people wouldn't have liked it, I imagine. Another case of people having shit taste, I suppose.

I just realized that we never really hear much about the interests of the characters besides the obvious stuff. Not only talking about Haruhi but for her it's "likes weird stuff and is good at everything if she wants to be", Yuki likes to read I guess and Koizumi I have no idea. See, Haruhi was never a pure moeblob story. And even though Disappearance Yuki was moe, the story tiself, hell, the whole of the original Haruhi, was itself never meant to be pure moe. There's a reason why Itsuki was on the team - he helped balanced it out, and both Kyo and him were the pretty boys of the team. When you add in the larger conspiracy/mystery elements, you have a story that could set itself out to be more than just the moe that Haruhi was so fascinated in.

Yukichan could have worked, It could have worked if it was a doujin like pic related. And actually, even a doujin like pic related did a moe Yuki interface that could work in the main series.
