Plenty of pseudoscience, however, at least a lot of it is based on real concepts. The main selling point of this series is the character interactions, they are the driving force of the story. Also, both the anime and VN are great. I personally recommend the anime first, and then the VN just so you can relive the story with additional details instead of being distracted by what's missing.

Not major differences. Most of it is the same. There's quite a bit that the anime leaves out seeing that the story is over 30 hours long. There's only a handful of things the anime changes and is therefore not canon, but still pretty faithful.

If you don't plan on playing the VN, watch the anime. If you plan to play the VN, I would suggest playing it first and then watch the anime. Both are good, but watching the anime first takes away the first experience of Steins;Gate.

Really depends on which medium you prefer. I, for example, don't really play VNs. So I saw the anime first and because I enjoyed it so much, I played the VN and enjoyed it even more. Took a lot of my time but I think it was worth it.
