The filler in the anime is done in a way that you can't really skip it because it's intertwined with non-filler content and the plot was altered a bit for said filler.
There isn't much of it, like 8 episodes worth of filler in total that aren't recap episodes.
Series has 152 episodes, about 8 being filler and about 10 being recaps after each major arc.

Then if you're still mordibly curious, you can watch Hokuto no Ken 2, which while inferior to original in writing, still maintains the same tier of animation, music etc.

Also to add to this, after you've watched HnK1 and HnK2, you can read the last 4.5 volumes of the manga which the anime didn't adapt (HnK2 ends a few chapters into Volume 23, so you should read Volumes 23, 24, 25, 26 and 27).
