I think it's amusing to see it as a behind-the-scenes look at a battle harem anime, where Shouta is the beta MC surrounded by a gaggle of hot magical girls. Just imagine what series is like from his perspective:

Maidragon was pretty in line with the tone of the source material, and the adaption isn't even covering the most scintillating bits either. Also, every series featuring majority females has its fair share of fan-generated sexualization regardless of intended audiences or tone.

I would say that they both lend themselves fairly equally to the opportunity for character development, just how the respective authors would go about showing or expressing it would be different.

As for which formula works better, on the one hand, I'd say that it largely depends on how the individual receives the emotion conveyed by the show, but on the other hand, I think that Flying Witch had better sales number, which implies a certain amount of popularity or success on a large-scale.

I do feel that comparing the two, while they may have several similarities, is perhaps not entirely appropriate. I couldn't exactly tell you why I feel that way, beyond the notion that Flying Witch feels like a 'pure' SoL series, while Maidragon feels more like a comedic SoL. While they are both in the same general genre of slice of life, what they are aiming to achieve is, in some manner, different. Even the implementation of magical gimmicks feels different between the two series. In Flying Witch the magical aspects of it felt more 'natural,' and felt more like something that was meant to inspire curiosity and wonder, while Maidragon's magical gimmicks felt more like a medium by which to convey the pure outlandishness of a given situation.

Truth be told, I probably only remember Flying Witch as doing well sales-wise because it was in a terrible season for sales, unless my memory is fucking with me. I generally don't bother with sales threads because the shows I enjoy every season always do very poorly, so mentioning sales was a dumb move on my part.

If that's the case, then I'll probably stand by the first half of that mini-paragraph and just go with the idea that whichever formula works best is ultimately up to the individual watching to decide.

Maid dragon is an over the top sol anime with no sense of pacing, shitting on every classical fantasy mythology for the sake of otaku pandering but they want the dyke audience too so the character are just bland over sexualized jap trope characters, at least it was pretty

I honestly prefer Flying Witch. Maybe because it was more relatable? I did enjoy characters and their interactions more than Kobayashi, even though there's little character development and it's mostly very early on. It felt more natural and slower pace of the show was really relaxing.

Maid dragon was a lot more "animated" than flying witch was. The former was wackier and sillier, the second was more calm. I liked both but if I had to pick between the two, I think I liked Maid dragon more.

Maid Dragon is a deconstruction of the isekai genre that transfers inhabitants of a fantastical fantasy world into a boring mundane world where they have to fit in and get themselves some waifus/husbandos.
