Personally speaking, it's basically because I thought he was cool. When introduced to be the strongest, I didn't think much of him. I had seen soldiers get killed by Titans like nothing. The first scene in the anime showed humanity's strongest fighters coming home in pieces. So I had my expectations low. I just thought he'd be a pretentious faggot who would die in a minute on battlefield. That didn't happen, though. He was ridiculously strong. Taking down 3 Titans easily in just his introduction, and then complaining about getting dirty. I thought that was pretty fucking cool. Then we saw his subordinate dying. I thought he'd just not care or complain about getting dirty again, as SnK characters did kind of play by the tropes until then. He didn't. He cared. He even held his bloody hand. This made a pretty strong first impression.

Show a couple more scenes of him just being cool, like saving Eren in an instant or later beating him in the courtroom, and I was a fan. His sexy voice and cutey-ful looks also helped greatly, and the little obsession with keeping everything clean was fun. Unless you dislike assholes or men, there was not much reason to not love him.
