Outside of Unmarked, everyone typically stays transformed because they're able to maintain their forms as magical girls indefinitely and because it's too dangerous to transform right in front of someone you're about to beat the shit out of.

The reason no one does that in Unmarked is because no one knows anyone else's real identity and because when they do meet each other, they've already transformed prior.

Restart justifies its scenario by having everyone transform automatically whenever they're transported into the VR world.

Limited has everyone stay transform for the whole 24 hours because you're physically stronger and able to withstand more strain on the body if you're a magical girl.

JOKERS and everything else involves full-time magical girls so they never untransform anyway. Pretty sure Snow White's looked at as a delinquent by her own parents at this point in the story, since she disappears for long periods of time and because of her bad grades.

I just want to add that just because the anime covers the first arc, that doesn't mean that the anime is a good substitute for reading the first arc. I recommend reading the first arc. A lot of people hated Snow White's character because of what they saw of her behaviour in the show but if you read Unmarked, you'll see the full extent of her suffering through internal monologuing, thereby allowing you to further sympathise with her behaviour (more specifically, her backlash against Alice's attempts to help her)

The three sages are the disciples of the First Mage who created the Land of Magic. The First Mage disappeared a long time ago and the three sages bicker amongst each other, reincarnating every time they die, for control over the Land of Magic. Also, the memory manipulation that's been revealed has been revealed to be of a write-once nature. What I'm trying to say is that their memories are not being actively manipulated in real-time. Rather, much like a computer having some files deleted, those memories are gone. Well, with Cranberry, the memories are heavily suppressed. One character, due to the intensity of her emotions, was able to retain fragments of her memories regarding Cranberry. Cranberyr's memory suppression relied on Land of Magic technology though. She had to avoid being seen by you in order to avoid triggering the resurfacing of those memories regarding her. The BlueBell character however, her power IS memory manipulation and so once the memory is removed, it truly is gone (unless she creates a backup).
