You can give some of the side-material a look, I guess. Braunian Motion covers Braun's backstory and is frankly way better than it has any right being. Hades of the Dark Dimension is a Drama CD (which the translators did up to run over a video that makes it look like the VNs, pretty well-made for a fan effort) might as well be considered "Moeka's chapter" and is pretty good in it's own right. There are other side material manga and drama CDs but I'm not familiar with them myself.
Steins;Gate 0 is the sequel(/midquel) to S;G and to be honest all you need to get into it is to go through the original, the rest is just fun extra shit really.

VNs give you unparalleled insight into the thoughts of the characters and have a lot more room for side material that helps flesh out the characters.
