I went through a similar dysfunctional relationship in high school. Both of us had hella issues and she was incredibly self centered.
Obviously we were both at fault, we both contributed to the problem. You could argue I didn't care about the girl I was with at the time because I didn't do exactly as she wanted me to do. But one of the lines that resonates with me so well from Eva is when Shinji says to Asuka "how do you expect me to understand you if you won't tell me anything?" Every time I had an issue with my old GF she would yell at me for not just understanding her for no reason.
Though I was not flawless I do think I made an effort to care, but she just expected me to know exactly what to do or say because in her mind that would demonstrate that I "understand her" and apparently that's what a lot of people look for in a relationship, somebody who just "gets them".
It's a common trope that plays out and the stereotype is that women communicate in a way that they expect men to understand without using overt language, but men expect women to be able to communicate what they want explicitly. To be honest I felt like what it showed us was that Shinji does better with male friends (Toji and Kenske) because he never turned to those two demanding they mend his childhood issues. Asuka never did that either with the class rep she hung out with (forget her name). For whatever reason the characters in the show turn to people of the opposite sex and seek out validation and emotional fulfillment rather than pure friendship, but when it comes to people of the same sex they often get along just fine. Even Misato felt the need to kiss Shinji at the end for some reason.

The kitchen scene in EOE best describes Shinji's emotional level reaching it's tipping point in a fever dream type scenario. He wanted to 'help' Asuka, but all he did was try to force out her feelings (to him this was what you should do, due to his inability to communicate and try to understand) making her lash out at him, then started to ask her for help when she was angry. Looking down at him in disgust and insulting him for begging for help after he got burned and had and outburst was how he saw her, even though he was being "sincere".
Shinji feels like he's been there from the beginning for her, but it's *her* fault for not understanding him. It's all *everyone's* fault for not understanding him, which is how he sees it. Chocking her was his repressed emotions coming out, all the aggression he felt over Asuka not understanding him.
Asuka is also very bad at communicating, so Shinji's kitchen Asuka is just the outer layer of what she shows.
It's not that they didn't want to be in a relationship (be it friendship or mutual understanding), it's more like they figured the other would understand the other at some point and they'd start from there.

When that didn't work he begged for anybody in general, which is when Asuka just silently looks down at him. When he throws another tantrum and lets all emotions loose, he's basically doing what he's done before (running away, quitting, refusing to follow orders or following them incorrectly, inhibiting emotions, etc.) in hopes that someone will reprimand him so he can shift the blame and repress everything again.
