Kazan is a pretty good series for the ME theme. And you might finish it in a couple hours since it is only 7 volumes

I know the artist for the Ocarina of Time manga also illustrated some UAE writer's story about a kid training falcons.

There's actually a lot of manga with ME or Islamic imagery if you look. Including a bunch of shoujo mangas about girls falling in love with Arab princes. It's just that kind of stuff really has never been that big in the area of animation until somewhat recently. Although Gundam seems to have had plenty of token characters with islamic sounding names. Heck, the Char clone in Iron Blooded Orphans is a blonde haired lolicon whose adoptive surname is Fareed.
