Why is vanilla romance in anime so few and far between?
I'm not talking hentai.
Vanilla is boring so everything needs drama to be exciting. Stuff like Kuzu no Honkai is hot stuff because of that.
Nobody knows how to write it since most people left in the industry never experienced it. Not that they can write non-vanilla romances it's just with crazy shit you can always make an excuse for your incompetence with "it's crazy shit I ain't gotta explain shit"
Most vanilla romances are boring as shit and if people in manga acted normal it would end in two chapters.

OP, I see nobody resplying to your post, so I will try to explain with my limited understanding. As japanese are not very good at the whole romance thing, this makes it difficult for mangakas (who are japanese, obviously) to write good romance, therefore it's not very popular and so mangakas try to avoid it (and since anime is mostly manga adaptations, there is also not so much romance anime because of that). However, there do are good romance mangas in the shoujo genre, Kimi ni Todoke is shoujo iirc. But yeah basically that (before posting I updated the page and saw some people do posted their replies already, so sorry if some things in my post have already been said). Also english is not my first language, so also sorry if I did not express myself very good. Hope this helps OP.

And I made a typo on the very first line so I guess I'm dumb. I meant to type "replying" not "resplying", sorry.

anime watchers are broken people who gravitate towards other broken people, and they enjoy watching anime with relatable characters.

They could be short chapters like okusama or one room.
Hell, one room is about doing nothing but observing a girl behave around, Tawawa is about peeking at tits. I don't see how depicting a developing relationship would not work.
Then again, one may need to look in the shoujo section for this stuff.
Or is that only aimed at weird fujoshits?

It definitely could work for a shorter series but can you imagine doing like 100+ chapters of a romantic relationship that got started on chapter 2?
Then again who knows, I might just be a romantically crippled asshat. I like love stories but writing one that's believable sounds pretty hard so I'm not surprised there aren't a lot of them that don't beat around the bush with misunderstandings and unrequited feelings.
I need to read a lot more shoujo.

Maybe because they'd end up being slow moving snoozefests like Kimi ni todoke
Because regular anime and manga can't show delicious loving sex, deep kisses, pulling in close , handholding while cumming inside all the other nice things that makes vanilla h-manga and doujins so nice. So they have to fill romance anime/mango with drama and other shit to try and give it some content, mostly because few are actually well written enough to stand up on their own.
