Because Asuka is the type of character that needs to develop through various episodes. Her personality and character are exposed through short scenes of interaction between her and Misato/Shinji/Rei/Kaji. This is what makes her eventual mental breakdown so great, because while the story, audience and characters focus on Shinji's mental issues, Asuka's gets ignored until it's too late and then the whole thing blows up in your face. It was hard to capture that in a 2 hour film that was trying to cover 11 episodes of plot.

Anno did it because the original Asuka was a failure compared to the ever popular Rei Ayanami. Let me explain:

Very popular, as you can see from the response and even comments in this thread. Pairing Asuka up with a female lesbian gives her a whole new fanbase, which supports her.

Well of course, the existing Soryu fanbase spent 60% of the time arguing why Asuka didn't have any actual flaws that was her own fault, so this is simply Anno doing them a favor. Removing Asuka's flaws makes her a more attractive character as well.

Eyepatches are cool. Remember back in the day when it was Rei's signature popularity item? Bandages and eyepatches? Inspired an entire fashion movement in Japan even. Anno was envious of Rei's popularity and wished it for Asuka, so he transferred many of Rei's unique design elements onto Asuka.

See picture related. Because it's just not the eyepatch. Asuka is also not quite human any more.

Depends on what you mean. The original Asuka was for a large part of the series, simply a broken shell of a human being. In the tail end of the series she had little agency or anything to do really, besides being acted upon. In the Rebuilds she is more sane and actually manages to be more mature and grown.

But as a character, yes, she's a shell of her former self, it is the cost of catering to Asuka fans.

Anno fucked up Asuka because he's an Asuka fan. It is the inevitable consequence of giving the ability to rewrite to a fanboy. Not only did Asuka fandom come to ruin Asuka as a character, it also did a far worse number on Rei and the rest of EVA. Kaworu fans were placated with service which will be robbed from them in the next movie as well. Only then will they complain as well, only 4-7 years too late.
