Unless you understand what the Dragon Ball Super manga is, and can contextually place it among the other stuff going on and being released, it's not the easiest thing in the world to follow. Sure, you can fill in the holes on your own, but an actual story doesn't get written that way when it's supposed to stand on its own.

In the beginning the manga was more canon, but then Toriyama wasn't pleased with toei's handling of the anime and rewrote all the future arcs personally which is why he is credited as the sole author of the anime now.

Since he left to stop Toei from ruining the anime he promoted Toyo from illustrator to ward and now Toyo is allowed to make changes if Toriyama approves them. Toryiama is still credited as the sole author of the manga as well.

Well continuing to list sources is pointless actually because I checked and every source you can possibly find will say the exact same thing that Toriyama is the sole author.
