Not a reputable source, but I don't have the infamous image which has numerous screenshots from the anime and proposes this idea. Scene to scene Eva 001's size varies wildly.

Rather than canon it's more a fan observation that has usually been held as commonly accepted. I think it came about because of the QUALITY and that nobody at the time could secure/find a copy of the official databook for the anime(if there ever was one/there was one but it failed to list the height) so people just deduced figures based on screenshots.
