Yes having a job kills all desire or even enjoyment watching anime unlike when you were a NEET or even a kid, but building a backlog has more to do with method of each individual. When you have more experience with anime, there are things you can enjoy that anime noobs can't enjoy. People new to anime (and I'm talking like 250 is still new-ish) haven't seen enough anime to be able to accurately evaluate shows in relation to other shows. Like a wine taster needs to taste a lot of wines to be able to tell in what ways a specific wine stands out (I don't want to sound snobbish, this is just a convenient example). This causes them to miss the aspects of a show that stand out in relation to other similar shows. When you have more experience you can enjoy certain things that are done well whereas newer people will not gain enjoyment from these things because to them they seem normal. This is why I mostly stopped browsing /a/, there are too many people with strong opinions who aren't able to properly evaluate shows and it got too frustrating.

I'll give a really controversial example, and regardless of whether you or anyone else agrees or not, I hope you get the point. I think Kirito from SAO is a good character. Mainly due to his relationship with Asuna. He acts very maturely during his interactions with Asuna (like when they go live together near a lake but also in many other occasions). The way he acts is miles above the great majority of shounen protagonists you will ever see. Aside from that, he actually acts pretty maturely in general instead of the typical optimistic "LET'S GO I'll BEAT THE BAD GUYS FOR SURE". People call him edgy, a loner or no personality because of that but he really only acts like a normal person in contrast to most shounen characters. I immensely enjoyed SAO because of his character and because it's a solid show in general, something that people can't appreciate without having watched many comparable shows in the past.

In summary as you watch more things you can enjoy lots of shows that would seem entirely generic to less experienced viewers. I probably shouldn't have bothered typing this.

Reading garbage translations destroys prose and cadence, not to mention differences in how thoughts are expressed different between languages. Those are as important as scene composition or OST in anime. On top of that, you don't even know what the story is to begin with, given that you haven't read it and the anime adaption actually butchered the story. Not like most LNs where people pretend that not putting shitty internal monologue that the MC has directly into the anime 1:1 means the adaptation was unfaithful, but the story was actually changed by a stupid waifufag director, similar to Bokumachi and Dagashi Kashi.
