Most of the classical "characteristics" come from Hollywood and have nothing to do with mythological vampires or even Bram Stoker's Dracula. And she does drink blood, she just avoids doing so because blood is a drug to her rather than just sustenance.
Just a few things:
You go to Babylon to stop the goddesses alliance that want to destroy humans. There you encounter Enkidu first but he turns up to be a fake, it's someone possessing Enkidu's dead body (this tips Roman about who is this "Solomon") called Qingu/Kingu. Gilgamesh (Caster) has summoned a lot of Servants to fight the goddesses, including a projection of Merlin. There's some filler and foreshadowing, remains lightheartened and fairly harem-ish where you defeat the goddesses or persuade them to join you until the part you travel to the underworld to rescue Gilgamesh and bring him back to life because he died of being exhausted in general. Anyway, you kill Gorgon who was trying to do this Apocalypse against humans and foolishly awake the second Beast, Tiamat, sin II of "regression", nega genesis. This is the fellow beast "Solomon" tossed a Grail at to use.
Anyway Tiamat pretty much wastes most of Uruk and everyone including Gilgamesh's loyal secretary Siduri is turned into her monstrous children. From there is an uphill battle to fuck Tiamat up. Gilgamesh dies again to save your life, but returns as Heroic Spirit in the Afterlife to Ea Tiamat (who has gained a concept of Death thanks to King Hassan). It's got a general adventure tone and more or less a bit less serious. There are good moments like Kingu's realization of his love for Uruk and rebellion against Tiamat, even if he's not Enkidu, he realizes he wants to protect Uruk, his people and be with Gilgamesh, he sacrifices himself to become the chains that drag Tiamat to the afterlife. Or Merlin slipping through Avalon to help in the end.
The hints of Roman being more what it seems are very obvious. He acts more serious than usual in contrast to Merlin. Gilgamesh has some kind of mad respect (for his standards) for Roman and out of blue asks him his plan, counsel and shoos everyone to speak to him and do strategy in private. Ishtar is shocked Gilgamesh treats Roman as kind of a peer. Roman also gets set up as "Solomon" opposite and gives Mashu a really wise and touching advice after she has a nightmare with "Solomon" trying to pass as Roman. He explains what's the value of living and history. Fou's foreshadowing he's a Beast (actually Primate Murder, Beast IV) is here too.
It if serves any comfort, nips are speculating he'll be in Extella 2 or something because the butterfly representing his soul was seen flying toward the Moon in the PV. But I'm not sure if Extella is any better than FGO. FGO had brilliant moments and others which were trash. The good things were really fucking good. Roman is great. I'm glad Nasu didn't genderswap him.
I, for one, love FGO since it means I don't have to browse Type Moon threads anymore, setting me free from this decade old curse.
Also, since I hear it's topping even the likes of Granblue on grossing charts, I am glad for Nasu since he finally found what he was looking for perhaps since around Hollow Ataraxia: A way to make the maximum amount of money with the least amount of effort.

As he got his second life he lost his powers but the last thing he saw was a vision of destruction. So instead of leading a carefree life, Solomon as Roman dedicated his entire day to tirelessly save history and humanity.
The "Solomon" in London was Goetia, the first Beast, sin of "pity", possessing his body (who he resurrected after nesting there).

Roman is Solomon. He became human because of a wish.
"Solomon" = Goetia, king of Demons, possessing his body. He wanted to remake the planet since before the genesis to make it without a concept of death, at his image.
There's only one Fuyuki grail War in FGO, Solomon Caster and his Master Mauricebilly won, but because Mauricebilly wanted to avoid problems with other magus now he had his money to support his Chaldea project, he reported the Master of Saber won.
He never lost his memories. He... is complicated. Think of Solomon like a mix of Artoria, Enkidu, Arc and the subplot of BB/Blossom (for Goetia's existence). In life, he was a kind, beloved leader who seemed a bit of a coward because he loved peace, but that "personality" was only like that because God willed it. He was an empty, ego-less and desireless vessel of divine will despite being an "onmipotent and omniscient" king: just an agent of providence. his first wish and the only one he made in his life made him Roman. He is naturally like that: clumsy and kind, without self-esteem (which makes Da Vinci scold him) who has no longer divine gifts or special genius traits, but he is full of perseverance. He basically learned to be human and then dedicated his entire new life to save humanity and history even if he had no idea what to do.
While Goetia, who hijacked his body, looked down humans and pitied them. Solomon loved them and forgave their shortcomings, having hope in their future and seeing value in their ephemeral journeys.
Solomon was a "system", he had no personality, it was empty OP vessel for God to move. Roman who was the human life Solomon desired, is naturally a dork. He's truthfully an airhead guy who sees beauty in life, even if death is painful, and has the biggest balls you can ever think of. Even Gilgamesh has mad respect for him.
The Lawful Good Alignment wasn't a meme.
Mashu dies briefly tanking Goetia's NP but was later brought back to life by Fou who sacrifices all his accumulated power and sentience and becomes a regular animal in exchange. She helps (you) out Solomon's crumbling temple. Fou gave her a regular human lifespan. Fou congratulates Chaldea for defeating the fourth Beast (him) without violence.
Fou and Roman were the true heroes of the finale.

Because he'll throw away all his power for a chance to be a person and yet he'll dedicated all his life to save the world even as a small person. Because he's the opposite of an edgelord and arrogant asshole king yet he led Chaldea better than anyone would have done in his circumstances.
Nasu wrote America, Babylonia, Camelot and most of the last Order (the main story chapters with Roman). He loves it a lot, he decided since the beginning of the game that part 1 would be about Roman/Solomon, even envisioned his story with "Scrap" from Maaya Sakamoto. Just like another anon said above, he's really one of the best well-written characters he's come up in years and is a shame some are missing out because of the platform (plus some orders were filled of bad writing like some events). But at the same time it wouldn't have the same crushing impact if he hadn't been with us for over a year of adventures, silliness and shared moments to feel the loss.
Nasu was busy with FGO part 1 finale. Now he's taking a break after he wrote a short angsty epilogue from Guda's POV.
He did say he might focus on other projects after his vacation, I think, but I don't believe him.
They are going to do it, but they needed to finish FGO 1.0 before 2016. Priorities. Tsukihime shouldn't be as daunting to write as FGO unless Nasu revamps it completely and goes beyond the small town story.

They are slow as fuck. Most VN companies don't take a fraction of the time to release anything. Guess they don't give a shit about any work besides Fate, that's the only thing they release works on short notice.
Leaving aside the fact that the text and the images NEED coding to present themselves like you see in the visual novels (TM has used th kirikiri engine since Tsuki-bako, and Mahoyo has a lot of coding for every damn effect for the text and images), it's not that easy to do a game with a lot of text and arrange it so it makes sense.
Also, it's not that easy to make every design for every thing in the novel. Mahoyo has around 35,000 images (and a lot more which are the ones I don't wanted and just discarded with everything in their folder), going from character faces, to some random tree from the forest.
And everything needed to be coded for the images to look like they do, which is different to most visual novels out there (that's the reason why it's called kinetic novel). Just take a lot at the code for a simple part from Mahoyo, the "All About Ploy #1" accessed through the menu. It's pretty short in game, and very simple, but it has a lot of code for every effect on the screen. So, it's not that easy as you think.
Another thing to consider would be the plot. Making the game could be easy, but the plot comes from Kinoko, and if he isn't making any progress with that, there's no way that they can make it or even with the engine if there is nothing to make with it.
Now, THE REAL REASON WHY THE REMAKE HASN'T BEEN RELEASED YET:
French Bread' staff did state that the Tsukihime Rebirth project had started around June 2011.
From every work, only Tsukihime feels "incomplete" as most of the story from it (and this was told by Kinoko) centered too much on the heroines, and left aside the inner workings and mechanics of the world (we see proof of this when he later released rakkyo, which contains the most info about the world than anything else).
Tsukihime has the most plot points without desciptions or explanations, like the 6th System that Zepia wants to reach, the Aylesbury ritual, the will of the planet and whole lot of shenanigans that he simply hasn't addressed since 2001, barely mentioning them in character entries, random comments inside the game's files and/or random rants on their blog, with no further explanation about them.

Extella does and pretty much states /all/ timelines where humanity do not evolve or continues are pruned from existence. Only the ones they evolve properly continue endlessly. Endlessly is the keyword for you. Plus, the game ends with the setting of 'humans will manifest to live on Mooncell' if Earth dies.

It's funny how everyone assumes Arc would lose despite not knowing the full extent of her abilities. Creation of an entire world from nothing, specially something as specific as "world from the far future in which humanity has gone extinct" is a better feat than anything seen from Grand Servants, Gods, Beasts or whatever, not to mention it opens a literal world of usages and applications without needing to rely on simple raw force. It's even funnier considering she was weak and depowered there.

These are referred as the "evils that will be destroyed BY humanity" though, not the other way around. Primate Murder in Fate was always meant to lose. The Evil that destroys humans is Angra Mainyu, and he's Anti Beast.
Well, yes. Primate Murder has never been activated in Tsukihime. It's a tool of the counter force, and it'd only go online in a humanity extermination frenzy if the counter force is provoked. I'm sure if it was activated, it would get a really impressive kill count before being defeated, just like Tiamat.
You need to contextualize everything: That was 2005 anon. When Tsukihime and Fate were one single setting. The Beasts were described as "evils that are fated to be destroyed by humans" by Gilgamesh in Babylonia. This includes Beast IV, Primate Murder, Beast of Revelations or however you call him.
Angra Mainyu now has the conceptual advantage against most Beasts because he is the sum of humanity's evil, aka the sum of humanity or some bullshit.

And you can argue he can only overcome humans because the humanity principle is weak. You can have it two ways around. In any case, Goetia effectively destroyed humanity (outside of Chaldea), but his danger wasn't even that shit, but the fact he could become fucking God and rewrite the genesis of the planet before it was formed and he bends all universals laws and other chuunishit as expected of the King of Demons.

Tiamat grows stronger the more she regresses those who were born as her new children, specially humans. All Beasts become stronger because of humanity. Her sin is a regression, she feeds on this. Like Goetia got stronger because his pity released those zillions of Excalibur beams in different points of history. And PM gets stronger by comparison, with humans.
Tiamat starts at infinite primordial sea life generation and doesn't go anywhere from there. She's more effective against things that were born from her, since she can deny them from their root, but her power doesn't come from humanity in any way at all. It's a conceptual advantage rather than a power-up.
Her sin came from viewing humanity and rejecting them, but that didn't increase her statistics.
All Beasts powers come from humans. Gil explains it. She wasn't even powered up because she hasn't reached her peak yet.

Nasu is a balloon that keeps increasing in volume. Takeuchi uses saberface to keep him tethered which is why he must keep making more as time goes on to keep the ever inflating mushrooman in check.

It kind of doesn't matter. Sakura is loved and associated with love a lot of the time. Dark memes and all that aside, she has endured through the years and has many fans that are just loyal if you read the reactions for the polls and see the sheer amount of love put into her fanart and birthday art. Amazing fact is she is one of TM's not just Fate's beloved characters even without a lot of exposure.
Noriko Shitaya, her VA, getting married and being confirmed pregnant when she got the green light for the movie was a great thing. Also seems to have no issues working even after giving birth, we never even see news of issues with roles.
It's ironic that of the three main VAs, she just casually has a family together without much fanfare. Shitaya is also pretty cute that she honestly likes Shirou, while Rin and Saber's VA seem pretty ambivalent to the redhead.
